Heirloom Tomato Salad
Ingredients
5 pounds of assorted heirloom tomatoes
1/2 cup sliced Vidalia onions
1/4 cup toasted pine nuts
1/2 bunch of basil leaves, torn
1/3 cup crumbled blue cheese
2 1/2 tablespoons balsamic vinegar
5 tablespoons extra virgin olive oil
salt & pepper to taste
Preparation
Cut the tomatoes into quarters and slices and place on large
serving dish. Place the sliced Vidalia onions on top. Sprinkle
pine nuts, basil and blue cheese. Drizzle with oil and vinegar.
Season generously with salt and pepper. Serves 6.
