Farm Fresh Ratatouille
Ingredients:
1 tbsp olive oil
1 large sweet onion, chopped
3 cloves garlic, minced
2 zucchini or summer squash, chopped
1 small red pepper, chopped
2 large, ripe tomatoes, diced
¼ cup fresh basil, minced
2 tsp dried oregano
2 tsp dried thyme
2 bay leaves
Salt and pepper to taste
½ cup Romano cheese, grated
Method:
Heat olive oil in a large sauce pan. Sauté onions over medium heat until they being to caramelize. Add garlic, red pepper, and squash. Sauté 3-5 minutes stirring occasionally. Add tomatoes, basil, oregano, thyme, bay leaves and salt and pepper. Simmer over low heat, stirring occasionally, for 30 minutes. Remove from heat. Stir in Romano just prior to serving.
