Bruschetta Orzo Pasta Salad

INGREDIENTS

1 lb. orzo pasta (or any other pasta you like)

3 cups small diced tomatoes

2 tbsp. finely minced red onion
- 1 garlic clove, minced
- ¼ cup extra virgin olive oil
- 2 tbsp. white balsamic vinegar
- ¼ tsp. salt
- ¼ tsp. pepper
- ½ cup fresh basil
- 1 cup freshly grated Parmesan cheese
INSTRUCTIONS
- Cook pasta al dente.
- Drain and rinse with cold water.
- In a separate bowl, combine tomatoes, onion, garlic, olive oil, balsamic vinegar, salt and pepper.
- Stir ingredients and mix with pasta.
- Add fresh basil and Parmesan cheese.
- Stir until ingredients are mixed completely.
