Savory Breakfast Bits
Ingredients
- 12 eggs
- 12 slices of uncooked bacon
- Salt and pepper to taste
Suggested Toppings
- Finely chopped peppers or tomatoes
- Chopped onions or scallions
- Chopped Avocado
- Chopped Spinach
- Crumbled Feta cheese
- Other vegetables or cheeses
Directions
Preheat oven to 375 degrees. Cut strips of uncooked bacon in half. Crisscross the two halves and place into a muffin tin. Repeat in each of 12 muffin cups. Crack one egg over each cup of crisscrossed bacon. Sprinkle with salt and pepper. Add in chopped vegetables, and shredded or crumbled cheese to taste. You can make a different combination for everyone at the breakfast table! Fold the bacon strips over the top. Bake for 25 minutes and enjoy!
