Apple Crisp
Base Ingredients
5 pounds of apples
1 orange – grated zest of whole orange and 2 tablespoons of freshly squeezed juice
1 lemon – grated zest of whole lemon and 2 tablespoons of freshly squeezed juice
½ cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
Topping Ingredients
1½ cups flour
¾ cup granulated sugar
¾ cup brown sugar, packed tightly
½ teaspoon salt
1 cup oatmeal
½ lb. cold unsalted butter, diced
Vanilla ice cream, optional
Preparation
Preheat oven to 350 degrees. Butter a 9x14x2 inch baking dish. Peel, core and cut apples into wedges in large bowl. Add all base ingredients (zests, juices, sugar and spices) and gently combine. Pour into baking dish.
For the topping, use an electric mixer on low to combine flour, sugars, salt, oatmeal and cold butter. Mix until the mixture is crumbly. Scatter evenly over the apples.
Place the apple crisp dish on a baking sheet, and bake for 1 hour until the top is brown and the apples are bubbly.
Serve warm. Adding a scoop of vanilla ice cream is optional, but highly recommended.
