Cape Cod Cranberry Sauce

Cape Cod Cranberry SauceIngredients:
1 ½ cups fresh Cape Cod cranberries
2 tsp fresh lemon zest
1 ¼ cup granulated sugar
2 tbs water
1 tsp vanilla extract
Salt and pepper to taste

Method:
In a medium sauce pan, combine cranberries, lemon zest, sugar, water and vanilla.
Stir over low heat while cranberries begin to soften, about ten minutes.
Bring heat to medium, and simmer sauce until cranberries have burst and sauce has reached the desired consistency.
Cool to room temperature.
Add salt and pepper to taste.
Serve or refrigerate.
